Thumbs up Masala biryani

MASALA BIRYANI.


ING:
Beef / 1 kg,boiled with salt,ginger/garlic paste n red chillies.
Chicken / 250 gms with bones.
Aloo / 4-5 nos,boiled with salt n 1 pinch yellow food colour.
Onion / 2 med,finely sliced.
Tomatoes / 4-5 big one,chopped.
Pudina / 1/4 bunch,chopped.
Hari mirchein / 8-10 nos.
Ginger/garlic paste/2 tbsp.
Salt / 2 tsp.
Lal pissi mirch(deghi) / 2 tsp.
Haldi / 1tsp.
Dhania powder / 3 tsp.
Cinnamon sticks / 1-2 nos.
Green illaichi / 5-6 nos.
Long / 3-4 nos
Kali mirch / 8-10 nos.
Tez patta/ 2 no.
Onion fried / 1/2 cup.
Jaifal/javetri powder / 1 tsp.
Dahi / 1 pao,thick.
Yellow food colour / 3/4 tsp.
Garam masala powder / 1 tsp.
Kewra / 3-4 drops.
Lemon juice 2 tbsp.
Ghee / 1 cup.

FOR RICE:
Rice /1 kg.soaked for 15 mins.
Salt /2 tbsp
Cinnamon sticks / 1-2 nos.
Green illaichi / 5-6 nos.
Long / 3-4 nos
Kali mirch / 8-10 nos.
Tez patta/ 2 no.
Vinegar / 3-4 tbsp.

METHOD:
-Boil water add salt,cinnamon sticks,green illaichi,long,kali mirch,tez patta n let it boil.
-Add rice n let it cook,when boil add vinegar n mix.
-1 kanni boil kar lein. drain n keep aside.

METHOD:
-Hari mirchein 8-10 n fried onion chopper main dal ker chopped kar lein.
-Dahi ko whisked ker ke yellow food colour add karein aur aachi tarhan mix kar lein.
-Ghee melt ker ke onion light golden karein,tomatoes ginger/garlic paste,salt add karein.
-Lal pissi mirch,haldi,pissa dhania dal ker mix karein.
-Cinnamon sticks,green illaichi,long,kali mirch,tez patta dal ker masala bhooney.
-Chicken dal ker bhooney,thora pani 3-4 tbsp dalein aur chicken ko bhoonein.
-Aloo dalein,2-3 hari mirchein,aur beef dal ker 1/2 cup pani dalein aur cover
ker ke cook karein.
-Boil aa jaye tu oil alaag nikaal lein,jaifel/ javetri,pissa garam masala,kewra,
lemon juice,hari mirchein,pudina,chopped onion/mirhoon ka mixture dalein.
-Dahi dalein aur 1/2 cup pani dalein ,ooper rice dal dein.

-Oil ( jo alaag nikaal diya tha) woh rice ke aik taraf dalein aur doosri side pe
3-4 tbsp sada oil dalein.
-Zarde ka rung pani main dissolve ker ke woh rice ke aik side pe dalein.
-High flame pe rakhein taake steam ban jaye,aik taraf se zara sa rice ko ulat pulat
kae dein aur phir dum pe rakh dein.
-10-15 min dum pe rakhein. READY HAI, dish out karein aur raita ke saath serve karein.

RAITA.

ING:
Onion / 1 chopped.
Cucumber / 1 chopped.
Tomato / 1 no, chopped.
Salt / 1/2 tsp.
Dahi / 1 pao.

METHOD:
-mix everything in dahi,garnish it with bhuna zeera powder n serve it with biryani.
