Lemon Tart

Dough
200 grams Maida or (7 ounces)
100 grams of salted soft Butter or (about 1/2 cup US standard)
3 Tbl castor sugar
1 small egg
1 tbl cream
Make dough by first mixing with your hands butter & maida. until crumbs form, then mix in sugar & (beat egg with cream) and make dough. put in a plastic wrap in fridge for 1 hr.
Roll out all the dough in to a ball, & roll out , and lift up and take out dough in to tart or grease pan. Press with fingers inside the edges of pan. & trim off the excess dough from the pan. With a fork press the edges from the inside of the pan & poke some holes with the fork at the middle of the pan as well. Bake at 180Celsius or (350 Fareheit for USA) for 20-25 minutes.

Filling
200 ML Orange Juice or (6.5 ounces US)
200 Grams Castor Sugar or (7 ounces US)
50 Grams Butter or (3.5 Tblspoon)
4 Tbl corn flour
50 ML water or (almost 3.5 Tbl of water)
2 Egg yolks (beaten)
2 tsp Gelatin pwd
100 ML cream or (6.5 Tablespoon US)
25 ML Lemon Juice or (a little more than 1.5 Tblspoon)
Lemon Zest from 1 lemon
- In a pan add orange juice, butter & castor sugar. Cook for 2-3 minutes while stirring. Then add cornflour. (mix seperately corn flour & water & stir until lumps are gone)
Then add egg yolks & keep stirring 2-3 minutes. Then add gelatin pwd. & cream. Cook another minute or so, & take out of pan. Add lemon juice & zest. With an electric mixer beat the filling until smooth. Cool a little.

Cool the tart (dough) after you take it out of the oven for couple of minutes, & add the filling. Put it in the fridge, & serve cold. Garnish with some Lemon slices.
